The restaurant was born in the first half of 1800 by the name of "Le Stanze di Piazza Carità" and was very popular among intellectuals of the city, such as the literary historian Francesco De Sanctis.

Paolo now supports his father Raffaele Surace, pizzaiolo maestro, founder and vice-president of the True Neapolitan Pizza Association in the management of the restaurant and he inherited from him the passion for the preparation of the True Neapolitan pizza.
The True Neapolitan Pizza Association (AVPN) was founded in June 1984 in Naples, where it still has its registered and operational office and is the only non-profit association which defends and promotes the culture of the True Neapolitan Pizza in the world.
